It’s Here!

The day has finally come! My parents are on their way down now along with my brother, Chase, and my gramma. I could not be happier!! I love it when my family comes to Raleigh; I can show them everything I talk about; they can finally put a name to a face or place.

This morning I scrubbed my apartment clean from top to bottom; there’s really nothing like a clean apartment, especially when family is coming to visit. Post cleaning, breakfast in a bowl of muesli with a sliced banana and Trader Joe’s cookie butter. Has anyone tried their cookie butter? Warning: Your taste buds will explode. It has the consistency of natural-hardy peanut butter without the runs and a hint of toasted graham cracker..unbelievably good! It was my first experience putting nut butter atop muesli; usually I incorporate a healthy fat in the form of toasted almonds, flax or pumpkin seeds, but the nut butter added creaminess and I stayed satiated much longer than before. Must do more often!

 A coffee date followed at Bruegger’s with a small hazelnut coffee and skim milk; who knew Bruegger’s doesn’t make lattes or have syrup? Being a latte-addict, I was quite bummed. But I improvised and, although it was no latte, it worked.

I headed straight to the gym to get a sweat-sesh in before today’s festivities; 30 minute HIIT on the elliptical followed by a halved-version of Ripped and Chiseled. I didn’t realize how winded the intervals made me until halfway through the weights but I wanted to get a strength workout in one way or another; instead of completing rep for rep, I halved all of the exercises; the workout flew by!

Once my family gets here, we’re heading to SAS to tour the facility! Resting up tonight for the BIG DAY tomorrow!!

Slutty Brownies

Happy Sunday!

I’m back in Pittsburgh for Spring Break and the weather is actually not bad! Sunny skies and warm running weather yesterday, breezy but bearable and off/on sunshine today; can’t complain for March temperatures like this :-).

Every time I come home, my mother and I vie for the daily crossword puzzle; we’re both obsessed with word puzzles! Call me crazy but ever since I’ve started doing them, my vocabulary has advanced. Maybe it’s what I use to justify to everyone who calls me a nerd but I’m sticking to it! As I was flipping through the Pittsburgh-Post Gazette, I came across an article celebrating the Oreo and it being around for a century. (Read the article-it’s very comical!)
It’s only appropriate to celebrate this American cookie with a recipe; but not just any-old recipe. This calls for a brownie; but not just any-old brownie..I’m talking a brownie recipe that ignores the standard ingredients; one that calls for so much butter you have to make a special trip to the store for; one that uses every measuring cup in your pantry; one that lures everyone in your household into the kitchen..

(Drumroll please) Slutty Brownies!

Now you may be thinking “for someone preaching healthy recipes and fitness, this seems contradicting,” but everything in moderation! I’m not telling you to sit there and eat the entire batch in one sitting (but if you do, I don’t judge 😉 ). Share with coworkers, family, and friends; treat yourself for all of your hard work by indulging a little.

Ingredients: Brownie layer

  • 10T. butter
  • 1 1/4cups sugar
  • 3/4cups cocoa powder
  • 1/2t. salt
  • 2t. vanilla extract
  • 2 eggs
  • 1/2cups flour

Cookie Dough layer 

  • 1 stick of butter
  • 1/4cup brown sugar
  • 3/4cup sugar
  • 1 egg
  • 1 1/4t. vanilla extract
  • 1 1/4cups flour
  • 1/2t. salt, baking soda, and baking powder
  • 1cup chocolate chips

16 Oreos 

Prep:
1. Melt butter in a saucepan over medium heat. Whisk in sugar and cocoa powder. Remove from heat and add salt, vanilla extract, eggs, and flour- stirring until everything is incorporated. Sit aside.
2. Beat butter and sugars until creamy. Add in salt, vanilla extract, and egg (make sure to scrap down the sides of the bowl!). Carefully stir in flour.
3. Preheat oven to 350degrees. Spray a 9X9 baking dish with cooking spray. Pour cookie dough batter first, spreading it out so it lays evenly (push into the corners). Layer the Oreos on top, not overlapping them. Pour brownie batter on top. 
4. Bake for 35-40 minutes or until the knife comes out of the brownie clean.

The verdict? AH-MAZ-ING! They’re on the denser side so a little brownie goes a long way.

Pumpkin Oatmeal

The definition of fall is in this bowl of comfortableness! This oatmeal recipe is nothing out-of-the-ordinary, but it’s just too scrumptious to keep to myself :).

Usually I prefer my oatmeal made with milk, but this is my only exception; water seems to contribute to the oatmeal’s gooey consistency and texture.

Ingredients:

  • 1/2 cup old-fashioned oats
  • 1 cup water
  • 1/2 cup pumpkin
  • 1/4 cup Greek yogurt
  • sweetener (optional)
  • banana (frozen)
  • 1 tablespoon (or more) pumpkin butter (Trader Joe’s)
  • sprinkles of cinnamon, pumpkin pie spice, nutmeg, or all!
Prep:
  1. combine oats and water in a bowl. nuke for ~3 minutes.
  2. add pumpkin, yogurt, and a little more water (I like my oatmeal very voluminousness). nuke ~2-3 minutes.
  3. skip the added water if you’re normal add a little more water, sweetener, and frozen banana. nuke ~2-3 minutes.
  4. finally, dollop with pumpkin butter and sprinkle the spices of your choice!

Dark Chocolate Cherry Brownies

Hello! It’s been too long since I’ve posted ANYTHING! Blame school. Nothing says a B-E-A-Utiful, sunny, football-filled day than dark chocolate cherry brownies 🙂 Plus, you cannot beat the smell of your apartment while anything chocolatey bakes 🙂

Ingredients:

  • 3/4c. flour
  • 1c. sugar
  • 3/4c. cocoa powder
  • 1t. baking powder
  • 3/4t. salt
  • 1/3c. cherry preserves
  • 1/3c. water
  • 5T. butter
  • 1 egg & 1 egg white
  • 1/3c. chocolate chips (or more-no judging)

Prep:

  1. mix the first 5 ingredients together-set aside.
  2. combine in a saucepan cherry preserves, water, and butter-bring to a boil.
  3. add preserve mixture to flour mixture & stir.
  4. add egg and egg white-stir.
  5. add chocolate chips.

Bake at 350degrees for ~25 minutes. And….:D.
